Chinese chili oil (辣椒油) is one of the most-used condiments in Chinese cooking — a hot, aromatic oil infused with chili flakes and spices that adds instant depth to any dish.

What Is Chinese Chili Oil?

Different from Western hot sauce — it is primarily an oil infused with chili rather than a sauce. Best versions are made by heating oil with star anise, cinnamon, ginger, and garlic, then pouring over chili flakes.

Lao Gan Ma (老干妈)

The most famous chili oil brand in China — founded by Tao Huabi in Guizhou in 1984. Her “Spicy Chili Crisp” (油辣椒) has become a global phenomenon.

How to Make at Home

Heat 200ml oil with star anise, cassia bark, and ginger. Let cool slightly. Pour over 3 tbsp chili flakes and sesame seeds. Steep 30 minutes. Store in jar.
